Ingredients

6 tablespoons vegetable oil
1 onion, chopped
2 cloves garlic, chopped
1 teaspoon ginger, julienne
2 to 3 fresh tomatoes, diced
1 teaspoon salt
1/2 teaspoon chili powder
1 green chili, finely chopped
1 teaspoon ground cumin
1 teaspoon turmeric
1 pound chicken, cooked
1 cup water
1 1/2 teaspoons garam masala
1/2 teaspoon dried fenugreek
1/2 green bell pepper, chopped

Directions

Heat oil in a large deep frying pan adding chopped onions and fry for 4 to 5 minutes on a medium heat or once the onions are slightly brown. Add the garlic and ginger and cook for a further 1 or 2 minutes. Add the tomatoes, salt, chili powder, green chili, ground cumin and turmeric.

Turn up the heat and further cook for another 1 minute then put in the chicken. It is very crucial that spices are mixed within the pan at this point to ensure that the chicken cooks with texture and flavor. Add water after stirring the chicken into the spices.

Turn down the heat slightly and stir in the garam masala and fenugreek and cook for a further 5 minutes, also adding in the bell pepper stirring now and again. Serve sprinkled with green coriander.

What is a recipe?

A recipe is a set of instruction used for preparing and producing a certain food, dish, or drink. The purpose of a recipe is to have a precise record of the ingredients used, the amounts needed, and the way they are combined.

(1) The Recipe Name tells you what you'll be making. Sometimes the author will include personal information on the recipe.

(2) There are three components to a recipe. The first is the List of Ingredients, and the second is the Amount of the ingredients.

(3) The third is the Preparation Instructions. A well-written recipe will list all ingredients in the order they will be added in the Preparation Instructions. Most well-written recipes will spell out pan size, cooking temperature, and how much of each ingredient to use. However, you will find some poorly-written recipes that use abbreviations.

(4) Some recipe will include Variations for the recipe and also how to Store your prepared dish.

Check out a sample of a well-written recipe below:

Read your recipe carefully before starting: Be sure you have all the ingredients called for and that you understand the recipe clearly. This is the reason most recipe fail. If the recipe says “room temperature,” there is usually a reason.

When preparing a recipe for the first time, it is recommended that you follow the recipe exactly so you have an initial template of how the writer intended it to look and taste. Then you can experiment from there.

Why a recipe does not work.

Yes, there are some recipes that do not work. This is usually because of a misprint, an editing error, and the recipe not being tested properly before printing.

No matter how detailed the recipe is written, the recipe can not tell you everything you need to know. Some judgment of your part is actually needed on certain variables, such as:

Kitchens are not stocked with the same equipment. Pots and pans can vary according to the material used to make them. Check out
Check out Choosing Cookware, A Well-Stocked Pantry and Baking Dish and Pan Sizes.
Ranges and oven have temperature differences.

Ingredients were not measured carefully. This is especially important when baking. Check out Cooking Equivalent Measurements and Basic Rules for Baking.

Cooking times that have been given in the recipe are meant to be used as a guideline only. If a cooking temperature is given as a means of determining doneness, this is usually accurate. Check out Cooking Temperature Chart.

You substituted ingredients improperly. Replacing ingredients may result vastly different taste. Could taste better or worse. Check out Ingredient Substitution Chart. The cook probably substituted an ingredient because they either:
(1) Don’t have or couldn’t find one of the ingredients.
(2) Wish to alter a recipe to lower the fat or calories.
(3) Don’t have a particular piece of equipment to cook the recipe as instructed. Some ingredients and cooking steps can be substituted or eliminated and some just cannot.
Ingredients Assumptions:
Unless otherwise noted in the recipe, assume that:
butter is unsalted
eggs are large (about 2 ounces each)
flour is unbleached all-purpose flour
sugar is white granulated
fresh herbs, greens, and lettuces are washed and dried
garlic, onions, and fresh ginger are peeled

    Curry
    What is Curry?
Curry simply means any dish which has a richly spiced sauce cooked with meat and/or vegetables.

Gravy is a sauce, made often from the juices that run naturally during cooking and often thickened with wheat flour or cornstarch for added texture. In The ______ the term can refer to a wider variety of sauces. The gravy may be further colored and flavored with gravy salt (a simple mix of salt and caramel food colouring) or gravy browning (gravy salt dissolved in water) or ready-made cubes and powders can be used as a substitute for natural meat or vegetable extracts.

Confectionery
List of candies
Caramels: Derived from a mixture of sucrose, glucose syrup, and milk products. The mixture does not crystallize, thus remains tacky.

Chocolates: Bite-sized confectioneries generally made with chocolate.

Divinity: A nougat-like confectionery based on egg whites with chopped nuts.

Dodol: A toffee-like food delicacy popular in Indonesia, Malaysia, and the Philippines

Dragée: Sugar-coated almonds and other types of sugar panned candy.

Fondant: Prepared from a warm mixture of glucose syrup and sucrose, which is partially crystallized. The fineness of the crystallites results in a creamy texture.

Fudge: Made by boiling milk and sugar to the soft-ball stage. In the US, it tends to be chocolate-flavored.

Halvah: Confectionery based on tahini, a paste made from ground sesame seeds.

Hard candy: Based on sugars cooked to the hard-crack stage. Examples include suckers (known as boiled sweets in British English), lollipops, jawbreakers (or gobstoppers), lemon drops, peppermint drops and disks, candy canes, rock candy, etc. Also included are types often mixed with nuts such as brittle. Others contain flavorings including coffee such as Kopiko.

Ice cream: Frozen, flavoured cream, often containing small pieces of chocolate, fruits and/or nuts. Jelly candies: Including those based on sugar and starch, pectin, gum, or gelatin such as Turkish delight (lokum), jelly beans, gumdrops, jujubes, gummies, etc. [11]

Liquorice: Containing extract of the liquorice root. Chewier and more resilient than gum/gelatin candies, but still designed for swallowing. For example, Liquorice allsorts. Has a similar taste to star anise.

Marshmallow: "Peeps" (a trade name), circus peanuts, fluffy puff, Jet-Puffed Marshmallows etc.

Marzipan: An almond-based confection, doughy in consistency, served in several different ways.

Mithai: A generic term for confectionery in India, typically made from dairy products and/or some form of flour. Sugar or molases are used as sweeteners.

Tablet: A crumbly milk-based soft and hard candy, based on sugars cooked to the soft-ball stage. Comes in several forms, such as wafers and heart shapes. Not to be confused with tableting, a method of candy production.

Taffy or chews: A candy that is folded many times above 50 °C, incorporating air bubbles thus reducing its density and making it opaque.

Rock candy is simply sugar with colouring or flavor added.

eeps are one of many types of marshmallow-type candies.

Brittles are a combination of nuts and caramelized sugar.

Chocolate is a common and popular confectionery and can be used in a wide variety of ways.

Total Time: 1 hr 25 min Prep: 45 min Cook: 40 min Yield: 12 servings Level: Easy Directions Add the ______ pieces to a soup pot over medium heat and cook until crisp and the fat is rendered. Remove the ______ from the pot and set it aside. Pour off most of the grease, but do not clean the pot. Return the pot to medium-high heat and add the carrots, celery and onions. Stir and cook for 2 minutes or so, then add the diced potatoes. Cook for 5 minutes, seasoning with the Cajun spice, 1/2 teaspoon salt and some pepper. Pour in the broth and bring it to a gentle boil. Cook until the potatoes are starting to get tender, about 10 minutes. Whisk together the milk and flour, then pour the mixture into the soup and allow the soup to cook for another 5 minutes. Remove about half of the soup and blend in a blender or food processor until completely smooth. Pour it back into the soup pot and stir to combine. Let it heat back up as you taste for seasoning, adding more of what it needs. Stir in the cream, then the parsley, Serve in bowls garnished with the grated cheese and crisp bacon pieces. The soup can also be frozen. Blending Hot Liquids: When blending hot liquids, remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid; that prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times, then process on high speed until smooth.

If cooking from frozen, either let the soup thaw in the fridge and then heat in a pan, or cook from frozen by placing in a pan and heating with 1/2 cup water.

Recipe Cuisine: Asian | Recipe Category: Sweet Prep Time: 5 mins | Cook time: 25 mins | Makes: 12 pieces

All purpose flour/Maida/Plain flour 1/2 cup

Ghee/Vegetable oil/dalda 1/4 cup 150ml
Maida 300ml
Vanilla essence/Cardomum 3-4 drops
Cashew nuts 6-8 nos

Method:
1.Keep a greased plate ready and a zip lock cover greased for leveling purpose. 2.In a pan/kadai,heat all the ghee and fry cashew nuts to golden brown and then add slowly the maida and fry in low flame, till the maida gets fried evenly (the ghee should be hot enough before u add,if you put a pinch of flour in it it should get fried immediately).Keep aside.

3.In a heavy bottomed vessel/kadai(non stick recommended),heat the sugar with little water to immerse the sugar,to one string consistency( If you pour the syrup in little cold water kept in a bowl, should form a string which doesn't dissolve immediately). Now add the food colour, essence and put off the stove.

4.Remove from the stove and add the fried maida and keep on stirring.(yes Off fire!)

5.At one stage the mixture gets thickened you will know and when it is still loose enough to spread in a plate, spread evenly in the greased plate kept ready and use the zip lock to make the surface smooth and leveled.

6.After it gets cooled down, still warm, grease the knife and cut into desired shapes. After it completely cools down, invert the plate with the burfis into another plate and tap gently and ur burfis are ready!
